Special Eggless Plum Cake- Fruit Cake Recipe without Oven, Yeast, and Eggs

Plum Cake is made in a wide range with either dried fruits or fresh fruits of your choice. This is a Christmas Cake Recipe that is easy and delicious.

Today, I’m going to share with you a Plum Cake recipe that doesn’t require eggs, yeast or oven. We’ll earn to bake this yummilicious cake in a covered pan. This cake is gonna be fluffy, soft and mouth-watering.

Ingredients:

  1. Dried Fruit (berries, apricot, raisin, cashew, almonds, etc.) : 200 gms
  2. Orange Juice : 200 ml
  3. Sugar : 150 gms
  4. Drinking Water : 150-160 ml
  5. All-purpose Flour : 1 ½ cup (200gm)
  6. Milk Powder : 3 tbsp
  7. Edible Oil (Plain, No Flavour Oil) : ¼ cup
  8. Coco Powder : 2 tbsp
  9. Vinegar : 2 tbsp
  10. Vanilla Essence : 1 tsp
  11. Baking Soda : ½ tbsp
  12. Baking Powder : 1 tbsp
  13. Salt : ¼ tbsp
  14. Tooti Frutti : 1 tbsp

Method

Step 1:

Take a mix of 200 gms of dry fruits of your choice in a bowl and add 200 ml of orange juice to it. Dip the dry fruits properly in the juice and leave it to soak and rest for about an hour.

Step 2:

Take a non-stick pan add sugar and melt it on medium flame with constant stirring for about 2 minutes to make caramel. Once the desired golden colour appears, with completely melted sugar, we now need to add water to it. This process needs utmost care. We need to immediately start stirring as soon as we add water to the caramelized sugar, so that the caramel gets evenly mixed with water. Once the bubbles stop forming and the water and caramel are mixed well, turn off the flame and transfer it to a bowl and let it cool.

Step 3:

Sieve all purpose flour in a bowl. Add milk powder, (you can also add mawa to it instead, if you prefer so) to it and mix them well. Now, add edible oil (or butter) cocoa powder, vinegar (or lemon juice), vanilla essence, and lastly add the cooled caramel to it and mix it well.

Step 4:

Once the above mixture is mixed well, add the soaked dry fruits along with orange juice and fold them well and ensure that there are no lumps formed.

Step 5:

If the mixture looks too dry, add milk to the mixture to get the desired consistency of the batter. It shouldn’t be too much of runny consistency, but more of a sticky one to get the perfect batter without lumps. Leave the batter aside for now.

Step 6:

On the other hand, pre-heat a deep vessel with a cover for 10 minutes on low flame to bake the cake. Meanwhile, we shall prepare the cake tin or mould in which we shall pour the batter to bake.

Step 7:

We need butter paper to line the mould (used here is ecobake butter paper). Measure the mould and tear the desired length of butter paper to line the mould. Also line the edges with butter paper, so there isn’t any need for greasing the mould as it is non sticky.

Step 8:

Now we need to add baking, powder, baking soda, salt and tooti frutti to the batter right before baking. Make sure you do this step right when you are all set to bake the cake. Now pour the mixture in the pre-set mould. Tap the mould lightly to ensure there aren’t any bubbles in it.

Step 9:

Garnish the cake with dry fruits of your choice to make it look appealing. Now, the preheated vessel is also ready with desired heat needed to bake the cake without an oven. Carefully without scalding yourself, place a low stand and then place the mould with cake batter in the vessel and close the lid. Let it bake for about 45-50 minutes on medium flame.

Step 10:

After about 20 minutes, check the progress of the cake. If the cake has raised and garnished dry fruits have sunk in, you can re-garnish it at this stage. Close the lid and let it bake for another 20-25 minutes. 

Step 11:

Once about 50 minutes are done, pierce a knife in the cake to check if it is baked well. If the knife comes out clean, the cake is baked as desired, and you can now turn off the flame. If the knife doesn’t come out clean, you can keep it on flame for another 10 minutes.

Step 12:

Once the cake it baked well, remove it from the vessel carefully and de-mold it and remove the butter paper from the bottom and sides of the cake.

The cake is ready with spongy, fluffy, and soft texture. The delicious, fluffy plum cake without eggs and use of oven, is now ready to be cut and served.
