Aloo Gobi ki Sabji and Soft Soft Puri Recipe | Puri Bhaji Recipe | आलू गोभी और नरम नरम पूरी रेसिपी

In this blog I'm sharing best ever tastiest "Aloo Gobi ki Sabji" (Potato & Cauliflower Cooking) with soft soft puri making in bonus tips.

This is a very popular cuisine of India. Very very tasty and tempting cuisine that everyone loves. Most of Indian restaurants even serves in everyday menu.

In this blog I'm telling all the secret method and recipe, following so you will cook it so well and yummy.

Preparation Time: 60 mins
Serving: 3-4 Peoples

Ingredients:

- 500 gm Cauliflower
- 250 gm Potato
- 1 pcs Tomato
- 1/2 cup Coriander Leaves
- 1 pcs Onion
- 2-3 nos Green Chillies
- 2-3 nos Bay Leaves
- 12-13 tsp Cooking Oil
- 10-12 nos Garlic Cloves
- 1 inch Ginger
- 1/2 tsp Coriander
- 1/2 tsp Cumin
- 1/2 tsp Black Pepper
- 3-4 nos Whole Red Chillies
- 1/2 tsp Turmeric Powder
- 1 & 1/2 tsp Tomato
- 400 gm Wheat Flour
- 1/2 tsp Garam Masala

Method:

- Basic Ingredients that we need is:
    - 500 gm of Cauliflower,
    - 250 gm of Potato,
    - 1 nos of Tomato,
    - 1/2 cup of Coriander Leaves (Finally Chopped),
    - 1 nos of Fine Chopped Onion,
    - 3 nos of Bay Leaves and 3 nos of Green Chillies
- Take a pan to heat on medium flame and add 2-3 tbsp of Cooking Oil
- As soon as oil heats, add Separated Cauliflower to fry till turns golden brown
- Turn the flame to low and take out fried Cauliflower in a bowl
- Again add 2-3 tbsp of Cooking Oil and turn the flame to medium
- Once oil heats, add chopped Potato and fry until gets brown skin
- Till Potato is being friend, we will prepare spices for this side-by-side
- For that we need, 10-12 nos of Garlic Cloves,
- 1 inch Ginger, 1/2 tsp of Whole Coriander,
- 1/2 tsp of Cumin, 1/2 tsp of Black Pepper,
- And 3-4 nos of Whole Red Chillies
- Now Grind all to puree after adding 10-20 ml of Water
- After that keep this aside and get back to frying Potato
- Take out friedn Potato in a bowl if ready
- Add 2-3 tbsp of Cooking Oil again
- Once heats, add chopped Onion and saute
- Then add Bay Leaves and Green Chillies and saute with Onion
- Keep the flame to medium
- Once onion gets crisp, we will spices now
- Add 1/2 tsp of Turmeric Powder and fry for 10-15 seconds
- Then add spices puree
- And fry until it start releasing oil, It may take upto 2-3 minutes on medium flame
- Now add chopped Tomato with 1 tsp of Salt (or to taste)
- Mix it well and turn the flame to low, Then cover the pan and let is cook for 2 minutes
- Now add fried Potato and Cauliflower, and mix well with spices
- Cook for 2 more minutes
- Add Water as required or Gravy you need
- Mix it well
- And cover the pan and let it cook for 4-5 minutes on low flame
- Till veg is cooking, we will prepare dough for Puri
- Take a vessel and sieve 400 gm (2 cup) of Wheat Flour
- Add 1/2 tsp of Salt and 2-3 tsp Edible Oil
- Mix throughly then add little-by-little water and knead to dough
- After that cover this up and let it rest for 10 minutes
- Then get back to cooking veg and remove the lid to check the status
- Stir gently and mix
- Crush/Squash 1-2 pieces of Potato and Cauliflower to ensure it it cooked well
- Stir gently then add 1/2 tsp of Garam Masala and 1/2 cup of Chopped Coriander Leaves
- Mix it gently and turn the flame off It is ready to serve now
- Get back to resting dough to make Soft Soft and Puffed Puris
- Squash the dough for few seconds to make it more softer
- Now take a small portion of dough and make a lemon size ball
- Press it, dip it in flour and roll it to disc (chapati)
- Take 1/2 ltr of Cooking Oil and let is pre-heat in a pan
- Put Puri in pre-heated oil and keep pressing gently both sides to puff it
- Similarly make all Puri for rest dough
- Make sure oil is too hot before frying Puris
- Once all done, serve it with Aloo Gobi Sabji and enjoy
